Like a lot of my cocktails, this one came to me in a dream. I do my best work when I’m sleeping. Which isn’t that often since I have a baby. I had a dream the other night involving a beautiful, boozy, deep purple lemonade, so naturally I had to bring that vision to life. I love whiskey + lemonade anyway, but I have a feeling this variation with blackcurrant and thyme will be in my regular cocktail rotation this summer.
- 2 oz bourbon
- 1/2 oz crème de cassis
- 3 oz lemonade
- 1 oz butterfly pea tea (optional, for color)
- Few sprigs of thyme
- Sparkling water
Add all but the last ingredient to a shaker with ice and shake until chilled. Strain into a large glass filled with ice and top with sparkling water. Garnish with lemon and thyme.
