Spring Brunch Pairing: Asparagus Frittata with Red Snappers

It's finally Spring, the season of brunch! Few things are better than a leisurely Sunday brunch, especially one enjoyed al fresco with a Bloody Mary or Mimosa in hand. As much as I love to brunch, I'm also the kind of person who likes to kick back and take it easy on the weekend, so if I'm having people over, I want an easy-going, one skillet kind of meal. Frittatas are the perfect solution, and so easy to change up to suit the season or the time of day. They're also delicious hot or room temperature (some say they're even better room temp), so there's no worrying about keeping it hot. And with all the time you save, you can make brunch cocktails!

It’s a brand new year and that means two things: setting new goals and getting back on track with old ones! One of my goals this year is to return to the healthy eating habits I strayed from during my pregnancy (morning sickness put me on a carb heavy diet). After my daughter was born, it was just too easy to continue eating quick and less than nutritious meals on a regular basis. After a long day, and especially with a new baby, easy wins. Now that Isla is a toddler, easy is still winning on most nights. So that’s why my New Year’s eating plan is made up of delicious, fresh, and very healthy meals that are also super quick and easy!
