Midnight Sunshine - a Frozen Aquavit Cocktail

This frozen cocktail is made with aquavit, lemon juice, thyme honey syrup, and frozen peaches for a fun, fruity and slightly herbal poolside sip.

Ingredients
  

For the cocktail:

  • 2 oz aquavit
  • 1 oz freshly squeezed lemon juice
  • 1 oz thyme honey syrup (see instructions below)
  • 1/2 cup frozen peaches (about 4-5 large slices)
  • 1 cup ice

For the thyme honey syrup:

  • 1/2 cup honey
  • 1/2 cup boiling water
  • 5-6 sprigs fresh thyme

Instructions
 

For the thyme honey syrup:

  • Combine the honey and boiling water and stir until the honey has completely dissolved.
  • Stir in the sprigs of thyme, cover, and allow to cool fully.
  • Once cooled (about 20 minutes), strain out the thyme.
  • Store any leftovers in a covered container in the refrigerator for up to 2 weeks.

For the cocktail:

  • Combine the aquavit, lemon juice, syrup, peaches, and ice in a blender and blend on high until smooth.
  • Pour into a cocktail glass (you could use a rocks glass too) and garnish with a peach fan or a sprig of thyme.
