Combine both ingredients in a blender with 1 cup of crushed ice. Add a pinch of salt, optional.
Blend on high until smooth (about 10-15 seconds).
Pour into a chilled highball glass and garnish with a lemon wheel and mint.

1 cup cream of coconut
3-4 cups of crushed ice
