Raspberry Rickey Mocktail

This non-alcoholic, low calorie Rickey is tart and refreshing, with only a mild sweetness from fresh raspberries.

Ingredients
  

  • 8 raspberries
  • 1 1/2 oz fresh lime juice
  • 6 oz sparkling water

Instructions
 

  • Muddle the raspberries in a cocktail shaker.
  • Add the lime juice and 1 oz of plain water.
  • Fill the cocktail shaker 3/4 with ice and shake until chilled, about 12 seconds.
  • Fine strain the drink into a highball glass filled with ice and top with sparkling water.
  • Garnish with raspberries and mint, and serve with a straw.
