Raspberry Rickey Mocktail

This non-alcoholic, low calorie Rickey is tart and refreshing, with only a mild sweetness from fresh raspberries.

- 8 raspberries
- 1 1/2 oz fresh lime juice
- 6 oz sparkling water
Muddle the raspberries in a cocktail shaker.
Add the lime juice and 1 oz of plain water.
Fill the cocktail shaker 3/4 with ice and shake until chilled, about 12 seconds.
Fine strain the drink into a highball glass filled with ice and top with sparkling water.
Garnish with raspberries and mint, and serve with a straw.
