Midnight Sunshine - a Frozen Aquavit Cocktail

This frozen cocktail is made with aquavit, lemon juice, thyme honey syrup, and frozen peaches for a fun, fruity and slightly herbal poolside sip.

For the cocktail:
- 2 oz aquavit
- 1 oz freshly squeezed lemon juice
- 1 oz thyme honey syrup (see instructions below)
- 1/2 cup frozen peaches (about 4-5 large slices)
- 1 cup ice
For the thyme honey syrup:
- 1/2 cup honey
- 1/2 cup boiling water
- 5-6 sprigs fresh thyme
For the thyme honey syrup:
Combine the honey and boiling water and stir until the honey has completely dissolved.
Stir in the sprigs of thyme, cover, and allow to cool fully.
Once cooled (about 20 minutes), strain out the thyme.
Store any leftovers in a covered container in the refrigerator for up to 2 weeks.
For the cocktail:
Combine the aquavit, lemon juice, syrup, peaches, and ice in a blender and blend on high until smooth.
Pour into a cocktail glass (you could use a rocks glass too) and garnish with a peach fan or a sprig of thyme.
