Pink Coconut Mojito

This fun twist on the classic Mojito uses pink coconut water ice spheres for an even more cool and refreshing rum cocktail.

  • 1 ½ oz white rum
  • ¾ oz lime juice
  • ¾ oz simple syrup
  • 10 mint leaves
  • 4-6 oz sparkling water
  • 2 pink coconut water ice spheres*


  • *To make the pink coconut water ice spheres, fill two Tovolo Ice Sphere molds with a quality pink coconut water like Harmless Harvest. Freeze the molds for at least 6 hours.
  • In a tall, heavy-bottomed glass, gently muddle the mint leaves and simple syrup.
  • Add two pink coconut water ice spheres to the glass and pour the rum and lime juice over.
  • Top with sparkling water, stir gently and serve with a straw. Garnish with a sprig of mint.
