Combine the sugar and warm water in a heat safe container and stir until all of the sugar has dissolved.
Stir in the coconut extract. Start with ½ teaspoon - 1 teaspoon and add more as needed, to taste.
Store the finished syrup in a closed container in the refrigerator for up to two weeks.
Notes
Different brands of coconut extract can produce varying strengths of coconut flavor. I have used Flavorganics Organic Coconut Extract and McCormick Coconut Extract.For Flavorganics, about 1 tablespoon of extract is needed per 1 cup of water and 1 cup of sugar (about 1 ¼ cups of simple syrup).For McCormick, only ½ - 1 teaspoon of extract is needed for the same amount of syrup.For other brands, simply start with ½ teaspoon and add more extract, as needed, to taste.
