Pineapple Bay Leaf Daiquiri

This tropical Daiquiri riff is sweet, tart, a little spiced, and very unique! An easy bay leaf syrup adds layers of flavor to pineapple and lime for the perfect summer rum cocktail.

Instructions
 

  • Combine all ingredients in a cocktail shaker and fill it three quarters with ice.
  • Shake until chilled, then strain into a chilled cocktail glass.
  • Garnish with a lime wheel or lime twist and a bay leaf, if desired.

Notes

Note: How sweet your pineapple juice is will affect the overall sweetness of your cocktail. If your juice is more sour, you may find that you prefer a slightly sweeter ratio of: 2 oz rum, 1 oz lime, ¾ oz pineapple and ¾ oz bay leaf syrup.
