Violet Gin Fizz (Floral Spring Cocktail)

This floral gin fizz combines lavender and violet with lemon and grapefruit for a light and refreshing fizz that's perfect for spring.

- 2 oz Cerulea Gin (Holystone Distilling)
- ½ oz lemon juice
- ½ oz grapefruit juice
- ½ oz simple syrup
- ¼ oz violet liqueur (The Bitter Truth Company)
- 1 egg white
- splash club soda
Combine the first six ingredients in a cocktail shaker without ice and shake hard for at least 30 seconds to build up the foam.
Carefully open the shaker (the pressure may cause some of the liquid to spill out) and fill the shaker with ice.
Shake until thoroughly chilled, about 12 seconds.
Strain the liquid into a highball glass and carefully top with an ounce of so of chilled club soda.
Garnish with an edible flower, basil, or mint.
